Indian Style Roast Chicken

I’m thankful to my cousin for this simple and very tasty recipe.It makes an easy to make dinner for rush days.

Ingredients:
For Marinade
1-1/2 tbsp Ginger Garlic paste(To make 1tsp ginger garlic paste you need 1/2 tsp ginger paste,1/2 tsp garlic paste)
1/4 tsp turmeric powder
1 tsp coriander powder
1/2 tsp chilli powder
1/2 tsp cumin powder
1 tbsp olive oil
2 tbsp Vinegar
salt and pepper

For Stuffing:
1/2 cup potato quartered
1/2 cup onion quartered
1/2 tomatoes quartered
5-7 cloves of garlic
1 inch Ginger
Juice of 1/2 Lemon
salt and pepper
2 cloves
2 cardamom
1/2 inch cinnamon
1 bay leaf

1 small sized chicken for 2

Procedure:
Mix the marinade well and apply on the inside and outside of chicken .
Place in airtight container and refrigerate in the fridge for 2-3 hours
Now stuff the chicken with the well mixed stuffing
Place the chicken breast side up
Cook in full blast(230C/446F) for 1 hr under tented aluminum foil
Uncover and cook 20 minutes.
This dish goes great with a side of mashed potatoes.

    Christina, this sounds delicious. maybe I’m missing it but what temperature do we use for this? and what is GG paste.

  • 230C which is 446F .Gg paste is ginger garlic paste typo error from my end.To make 1tsp ginger garlic paste you need 1/2 tsp ginger paste,1/2 tsp garlic paste.Hope this helps.Bon appétit
