Family Night Recipe: Home made Chicken Pizza
After my move to India,our family and many other friends I’ve spoken to seemed to be of the same opinion on the jacking prices of pizzas by well known fast food chains.After a talk with a very close friend,who had already tried her hand at home made pizza.I was finally inspired to try my hand at it too.And boy was it fun.
We got to do this as a family,everyone of us played a part in making the pizza.My husband came up with the marinade for the chicken,while I prepared the dough and the sauce and my little boy helped in putting the pizza together.
I truly think this is a fun activity to do together as a family on family night.
2 and 1/2 cup all-purpose flour (plain flour, maida)
1/2 teaspoon sugar
1/2 teaspoon salt
1 and 1/2 tablespoons dry yeast
2 tablespoons olive oil
1 cup lukewarm water(do not use hot water,it could kill the yeast)
About 1 tablespoons of all-purpose flour for rolling
8 small diced tomatoes
3-4 cloves garlic
2 tablespoons olive oil preferred
1 teaspoons Italian herbs
1 teaspoon salt(add as needed)
1 teaspoons sugar
1/4 teaspoon black pepper
¼ teaspoon chili flake
2 teaspoons corn starch (optional – if needed to thicken sauce)
For Chicken Marinade:
250 gms chicken cut into small pieces
Soy Sauce 1 tsp
2 cups shredded mozzarella cheese
1/2 cup thinly sliced green bell pepper in small pieces
2 small thinly sliced tomatoes
1.Dissolve the Yeast in luke warm water and set aside for 5 minutes
2.In a food processor or electric mixer or by hand(I used electric mixer,if your doing it by hand,knead for at least 10 minutes after all ingredients are incorporated) – Combine flour ,salt,sugar,olive oil and add the yeast water 1 tablespoon at a time until it forms into a thick dough.
3.Try giving a minute after every 1 tablespoon of yeast water,so that your dough doesn’t becoming runny.
4.Set the dough aside in a warm place covered with a damp towel.Takes approx 2 hours for the dough to rise and double in size.
5.Roll the dough thinly over lightly floored surface.If your dough is of perfect consistency you will not require to floor the rolling surface.
For Sauce:(you can make this ahead of time)
1.In a pan heat oil,add chili flakes,garlic,tomatoes and all the ingredients except corn starch.
2.Cook thoroughly until all the tomatoes are mashed.
3.Allow to cool and make into a fine paste in a blender or mixie but alternatively adding a tsp olive oil and 2 tbsp water,until you get saucy consistency
1.Shallow fry the chicken marinade for 10-15 minutes until the chicken is well cooked.
Making the Pizza:
1.Preheat the oven at 220 Celsius
2.Add parchment paper in the pan.(I used a cookie sheet and a cake pan to make the pizza).I rolled 4 – 6 inch Pizza
3.Roll the pizza dough and place them on the pan,spread the tomato sauce,and add the topping finally layering with the cheese.
4.Bake for 10-12 minutes,until the crust turns golden brown.Mine took only 10 minutes
