Carrot and Beans Sabzi/Koutu/Side Dish

Thanks to my mother,I grew up in a household where I fell in love with veggies. She was a fabulous cook, today theres no vegetable that I don’t eat, even though I m a hardcore non vegetarian.

This is something that I want to inspire in my children.
My mother’s recipes to me always made the vegetable the star.Simple yet delicious.
Carrot and beans truly compliment each other. And its a win win situation that I can get 2 veggies down together.
1 handful of onions
1 cups diced carrots
1 cup chopped beans
1/4 tsp Mustard seeds
1/4 tsp urad dhal
1/4 tsp cumin seeds
1-2 tbsp coarsely grinded coconut
1 green chili(Add more to make it spicy)
2 tbsp oil
1.Heat oil in a vessel
2.Let the mustard seeds splutter, add the urad daal and brown them.Tempering is optional.
3.Add onions, green chili and cumin seeds and saut√© until the onions turn transparent.
4.Add the carrots and beans and stir fry for 5 minutes.
5.Add 1/4 cup of water ,cover and cook for 10-15 minutes or until the vegetables are cooked.
6. Switch off the flame and add the grinded coconut
I cook Broccoli and Beans Sabzi/Koutu/Side Dish and Shredded Cabbage Sabzi/Koutu/Side Dish using the same recipe.
