The Classic Payasam
The Classic Indian Payasam.Yet another traditional dish and a favorite dessert.
1/4 cup cashews,
1/4 cup golden raisins
1/4 cup slivered almonds
1/2 gallon milk
3 cups vermicilli
1/4 cup milk
1 tbsp cardamom powder
2 tbsp Ghee(Clarified butter)
1.In a vessel add a tbsp ghee,once headed add cashews and almonds,brown fry them.
2.Add raisins and saute for 1/2 a minute.Set them aside.
3.Add vermicelli and brown fry them.Set them aside.
4.Add milk and cardamom powder and bring to a boil.Do not cook on high flame ,you could burn the milk.Keep stirring in between to keep milk from being burnt.
5.Add vermicelli ,sugar and cook until vermicelli is cooked(usually takes 12-15 mins)
6.Add condensed milk and the fried nuts and cook for a minute.
7.Switch off the flame.
